EASY 2 Story Gingerbread House & Template

This two-story gingerbread house promises to be as easy as it is festive! With the template I made for you, assembling this sugary beast is a breeze, leaving more time for the good stuff – laughter, creativity and making cherished family memories. My family looks forward to this tradition every year! With my Small & Large Gingerbread House Template, Perfect Royal Icing Recipe and The BEST Gingerbread House Recipe (and now this 2-story template), I hope to make gingerbread houses easy so families can enjoy the experience.

Start by making The BEST Gingerbread House Recipe for a strong gingerbread house structure. Roll the dough to about 1/4 inch thick and cut out the pieces on the template. Each piece tells you exactly how many to cut. (template at the bottom of this page)

*Note* We used a double batch of the recipe which made this huge house and 2 small houses with my small house template. There was still a lot of gingerbread house dough left over!

Place the pieces on parchment paper. Make sure they have enough space. They will puff up in the oven. Cook for about 12 minutes at 350°f. The pieces should be golden with light brown edges. They will harden as they cool.

While your pieces cool, make your Perfect Royal Icing. This icing dries very hard and is very thick. It acts as a glue and doesn’t sag which makes for easy assembly.

*Note* We used a double batch of the icing recipe. There was more than enough for all 3 houses we made. 

Assembly:
For our base this time, we used cardboard.

Start with the tall portion of the house. Make sure to use icing on all sides and along the seams inside as well as outside. I like to use my finger to really seal the edges together. You can cover this up later to make it look nicer.

Allow the bottom portion of the house to dry for a few minutes before putting on the roof. 

Once your large portion is together, assemble the smaller side. After allowing the bottom to dry for a few minutes, use a healthy amount of icing to hold the sides of the roof against the tall wall of the 2 story section. 

Start decorating! 

The kids each did their own Small Gingerbread House while Hubby and I did the big one! 

And in good gingerbread house fashion, there was lots of sugar snacking! 

We made Christmas Trees with sugar cones. We tipped them upside down, covered them with icing and decorated them.
