Rainbow Unicorn Cake

The absolute best part of my 6 year old’s Magical Unicorn Birthday Party was seeing her face when she saw her Rainbow Unicorn Cake. This cake was stunning and so, so tasty! It’s really not even that hard to make! Let me show you..

Okay, so I’d be lying if I said we made all of these from scratch. It’s a box cake. But with all of the time we put into the rest of the party, I’m not even ashamed!! This cake turned out so perfect.

You will need:
3 boxes of classic white Duncan Hines (this makes the unicorn cake and smaller candle cake)
**Make sure to use butter instead of oil. Your cake will taste so much better!
Food Coloring
2 large batches Buttercream Frosting

PANS:
We used the Wilton 8in Easy Layer Pans and they worked perfectly!
We also made a smaller “covid cake” (a cake for Little Miss to blow out her candles on) with the Wilton 6in Easy Layer Pans.

  • While the layers are cooking, make your Buttercream Frosting. I used 2 large batches of buttercream frosting between both cakes.

  • Stack the 8inch rounds on top of each other with a thin layer of buttercream frosting. Make sure each layer is flat and even – about 1/4 inch of frosting between each layer.
  • Cover the cake with frosting. Be generous so that crumbs don’t mix with the frosting. Try to even the sides and top so they are smooth.

  • Separate the rest of your frosting evenly into 5 bowls and add food coloring. I made pink, orange, yellow, green and blue pastels.

How to make a perfect Rainbow Piping Bag

  1. Prepare your piping bag with a larger star tip.
  2. Lay a piece of plastic wrap on the counter.
  3. Using a spatula, carefully take some pink frosting and lay it in a line on one end of the plastic wrap.
    (You can also do this by placing each color into it’s own piping bag and piping lines onto the plastic wrap.)
  4. Do the same with orange, yellow, green and blue.
  5. Then, pick up the end of the plastic wrap by pink and roll the plastic wrap into a tube.
  6. Twist the ends of the tube. 
  7. Cut off one end with scissors and place into your piping bag.

Now you are ready to start piping your flowers.

  • Keep your piping bag close to the cake as you direct it in a spiral motion. You can see the first flower I did rises a bit. It doesn’t look as much like a flower as the rest of them do. You almost want them to be flat.

  • Pipe the flowers into a ponytail shape on the unicorn. Fill in the blank spots with stars.

How awesome are these rainbow layers!? So good!

Make sure to cut your round cake properly to get enough servings for your party. As you can see, we cut large slices and then cut those into smaller rectangles for each person. We had WAY more than enough for our party.

Instructions

The Cake

  • Follow box cake directions EXCEPT use an equal amount of butter instead of oil.
  • Cook until toothpick comes out clean.
  • Make your favorite buttercream recipe. I used 2 large batches.
  • Stack each cake layer with about 1/4 inch of frosting between each layer. Make sure your frosting is smooth and even.
  • Frost the outside of the cake. Use a generous amount so that cake crumbs don't mix with the frosting.
  • Add your unicorn cake topper and eyelashes.

Rainbow Piping Bag & Flowers

  • Separate the rest of the frosting equally into 5 bowls and add food coloring. I did pastels - pink, orange, yellow, green, blue.
  • Using a piping bag, pipe pink circles for the cheeks. You can press edible glitter onto the cheeks if you like.
  • Lay out a sheet of plastic wrap. Starting at the edge, use a spatula to make lines of each color frosting. Then, roll up the plastic wrap and twist the edges to create a tube.
  • Cut one end of the tube and place in your piping bag with a large star tip.
  • Keeping the piping bag close to the cake, guide the bag in spirals to create flowers. Fill in the holes with stars.
